
Cranberry Glazed Ham
1 (6 to 8 pound) bone-in smoked, fully cooked half ham
1 (12 oz) package whole cranberries
2 tablespoons orange zest
1/2 cup honey
2 teaspoons crystallized ginger, chopped
1/4 cup freshly squeezed orange juice
Combine all ingredients (except ham) in a medium saucepan; place over medium-high heat, bring to a boil. Reduce heat, and simmer 10 minutes, uncovered, stirring occasionally.
Trim excess fat from ham.
Using a sharp knife, score the outside of the ham in a diamond pattern.
Place ham on a broiler pan lined with foil. Brush ham with 1/2 cup of cranberry mixture. Bake at 350 degrees for one hour. Baste with additional 1/2 cup of mixture and bake until thermometer registered 10 degrees (about an hour and a half). Baste with remaining mixture and bake an additional 10 minutes. Remove from oven. Let stand 15 minutes before slicing.
Note: The glaze works well on spiral cut hams too.
Variation:
For a smoother glaze, blend cooled cranberry mixture in a blender or food processor.
Make ahead tip: Make cranberry glaze up to three days ahead. Refrigerate in a covered container.
