
Creamed Spinach
1-1/2 pounds fresh baby spinach
2 tablespoon shallots, minced
1 tablespoon olive oil
1 tablespoon flour
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon nutmeg
3/4 cup heavy cream
Rinse and drain spinach in a colander.
Heat olive oil and add shallots. Sauté shallots for two minutes over medium heat.
Combine flour, salt, and nutmeg. Add mixture to pan and cook for two minutes, whisking constantly.
Add cream, a little at a time, whisking until thickened and bubbly.
Add spinach, a handful at a time and cook, stirring, until wilted. Adjust seasonings with salt and pepper.
