Garlic Green Beans
1 pound green beans, trimmed
1 tablespoon olive oil
1 tablespoon unsalted butter
1 tablespoon garlic, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
Blanch green beans in boiling water until they reach the level of tenderness that you prefer (3 to 6 minutes). Drain and immerse beans in a bowl of ice water. Drain again and place the drained beans onto a paper towel to remove the excess water.
Heat butter and olive oil in a large sauté pan and add garlic and green beans and cook stirring over medium heat for about 2-3 minutes. Season with salt and pepper.
Timesaver: Buy a bag of fresh trimmed green beans in the produce section at your grocers. They cost a bit more, but it will save you quite a bit of time if you’re in a hurry.
Make Ahead Tip: Blanch the green beans in advance and store in a freezer bag in the refrigerator or freezer.
Variation: When you add the garlic, toss in one tablespoon of chopped sundried tomatoes.
