Grilled Zucchini
1-1/2 pounds zucchini (about 4 medium)
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 teaspoon canola oil
Cut off the ends of the each zucchini and slice the zucchini in
half lengthwise. Heat grill or grill pan to
medium high heat and coat with canola oil. Brush a little oil onto the
cut side of the zucchini halves and sprinkle with Italian seasoning.
Grill seasoned zucchini for 3
to 5 minutes on the cut side first, and then, using tongs to turn,
grill for 3 to 5 minutes on the
other side. Remove from the zucchini from the grill and cut each
zucchini half into thick slices. Sprinkle with salt and pepper and
serve.
