
Parmesan Smashed Potatoes
2 pounds red new potatoes, peeled
1 tablespoon kosher salt
1 cup half and half
4 tablespoons unsalted butter, room temperature
1/2 cup freshly grated Parmesan
1/2 teaspoon ground white pepper
Cut peeled potatoes in half Place the potatoes and 1 teaspoon of salt in a 4-quart saucepan and add cold water to cover. Bring to a boil, lower the heat and simmer, covered for about 30 minutes, until completely tender. Drain.
Heat half & half in the microwave for one minute.
Place potatoes and butter in a large bowl and mash, using a potato masher, until large lumps are broken up. Slowly add heated half and half, whipping potatoes with a fork until they are light and fluffy. Add parmesan, salt and pepper to taste, and serve immediately.
