Apricot Brandy Pork Roulades

 

4 pork chops, pounded thin

4 ounces blue cheese

2 tablespoons dried cranberries

2 tablespoons pecans, chopped

1 cup apricot preserves

1/4 cup water

3 tablespoons brandy or orange juice

 

Preheat oven to 400 degrees

 

Bring apricot preserves and water to boil. Cook one minute. Add brandy and stir.

 

In a mixing bowl, combine blue cheese, cranberries, pecans and 3/4 cup of the apricot brandy sauce. Mix well

 

Place 1 tablespoon of this mixture on one side of the pork.

 

Roll up pork and secure with a toothpick.

 

Place pork (toothpick side down) on a baking sheet covered with parchment paper or aluminum foil.

 

Bake for 12 to 15 minutes.

 

Cut rolls into slices and serve with warmed apricot brandy sauce.

 

Serves 4
