Cheesy Chicken Quesadillas
2 cups cooked chicken, shredded
1 small onion, sliced
1 yellow bell pepper, sliced
8 large flour tortillas
2 cups Pepper Jack Cheese, shredded
1-2 tablespoons olive oil
Heat one tablespoon olive oil over medium heat in a large heavy skillet. Saute onions and bell peppers until tender. Remove from skillet.
Add one teaspoon olive oil to the skillet. Place one tortilla in the hot skillet. Layer tortilla with 1/2 cup chicken, 1/4 of the peppers and onions, and 1/2 cup cheese. Cover with remaining tortilla and heat for 2-3 minutes. Turn tortilla over and heat for another 2-3 minutes or until cheese is melted.
Repeat with remaining tortillas, adding additional olive oil if needed. Place cooked tortillas on a cutting board and cut into four quarters.
Serve with sour cream, salsa, and prepared guacamole.
