Chicken Caesar Wrap

 

4 large flour tortillas (8 or 10 inch)
1/2 to 1 cup shredded romaine lettuce
1 1/2 cup cooked chicken, cut up
1 small red onion, thinly sliced
1/3 cup Parmesan cheese, grated
bottled or homemade Caesar dressing

Soften the tortillas by placing them between two layers of damp paper towels. Microwave for 30 to 45 seconds. Layer romaine, chicken and onion down center of tortilla. Drizzle dressing and sprinkle with Parmesan. To wrap, fold the opposite ends of the tortilla towards the middle. Starting from an unfolded end, roll the tortilla into a cylinder. Folded side down, cut the cylinder diagonally into two pieces.
