Creamy Cajun Pasta with Chicken
2 cups cooked chicken, cut into thin strips
1 tablespoon olive oil
16 oz bowtie pasta (farfalle), cooked
1 thinly sliced green onion
3/4 cup heavy whipping cream
2 tablespoons sun-dried tomatoes, chopped
2 teaspoons cajun seasoning
1/4 teaspoon salt
1/4 teaspoon dried basil
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder
1/4 cup grated parmesan cheese
In a large skillet heat the olive oil over medium heat. Add chicken and sauté for 1 minute. reduce heat and add green onion, heavy cream, sun-dried tomatoes, basil, Cajun seasoning, salt, garlic powder, black pepper and simmer for about 5 minutes.
Combine drained pasta with chicken and sauce. Stir in parmesan cheese. Serve warm.
