Elegant Chicken Salad
3 cups cooked chicken, cubed
1/2 cup walnuts, chopped
1 celery rib, sliced
2 tablespoons red onion, finely chopped
1 cup halved seedless red grapes
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
Toast walnuts nuts in a shallow baking pan in a 350° F oven until golden, about 5 to 7 minutes.
Toss together all ingredients in a large bowl until combined well.
Serve on a croissant for an elegant lunch.
