Roasted Baby Red Potatoes
1 pound baby red potatoes, quartered or cubed
2 cloves of garlic, minced
2 teaspoon fresh rosemary, minced
2 tablespoon olive oil
salt and pepper to taste
Preheat oven to 350 degrees.
Place potatoes in a large bowl. Drizzle with olive oil, season with salt and pepper. Add garlic and rosemary. Mix well so that all of the potatoes are coated with garlic and oil. Place the potatoes on a large shallow baking pan. Spread out so that they are in a single layer. Roast until potatoes are browned and tender, about 40 to 50 minutes, turning occasionally with a spatula or tongs.
