Roasted Chicken Pizza with Onions and Rosemary1 refrigerated pizza crust 2 cups cooked chicken, coarsely chopped 1 cup onions, sliced 2 tablespoons olive oil 2 garlic cloves, pressed 1 tablespoon fresh rosemary (or one teaspoon dried) 1/2 teaspoon salt 1/4 teaspoon coarsely ground black pepper 8 ounces of mozzarella cheese, shredded (divided) Preheat oven to 425 degrees. Roll out pizza dough on a floured surface. Place crust on a shallow baking sheet, cookie sheet, or pizza stone. Place chicken, onion, olive oil, garlic, rosemary, salt, pepper, rosemary and 1 cup of the cheese in a medium sized bowl. Toss to combine. Spread chicken mixture over pizza dough leaving 1/2 inch around the edge uncovered. Sprinkle with remaining cheese. bake 18-20 minutes or until the crust has browned. Remove from oven and let stand 5-10 minutes. Cut into squares and serve. Serves 6 |
