Salmon with Citrus Honey Glaze
1/4 cup fresh lemon juice
1/4 cup fresh orange juice
2 tablespoons honey
1 teaspoon finely grated lemon zest
4 (5-ounce) salmon fillets
Salt and ground black pepper
Cooking spray
Preheat
oven to 400 degrees.
Brush
salmon with olive oil and season with salt and pepper.
Place
in the baking pan skin side down.
Combine
lemon juice, orange juice, honey, and lemon zest in a small bowl.
Pour
citrus mixture over salmon.
Place
baking pan 4 to 6 inches away from the heat and bake for 8 minutes.
Note:
To find out if the fish is done: separate the flakes in the thickest part of
the fish with a fork and peek inside. Salmon is cooked to medium when you can
separate the flakes at the surface.
