Sweet & White Potato whip with Caramelized shallots
1 1/2 pounds red or russet potatoes, peeled and quartered
1/2 pound sweet potatoes, peeled and quartered
1 cup half and half, warmed slightly
4 tablespoons butter, room temperature
1 tablespoon olive oil
4 shallots, peeled and sliced
1 tablespoon sugar
salt and pepper to taste
Boil sweet and white potatoes together in salted water for about 20 minutes.
While the potatoes are boiling, heat olive oil in a medium sized sauté pan. Add the sliced shallots and sauté until tender (about 2 minutes). Add sugar and continue cooking over medium heat until the shallots begin to brown, for 5 to 6 more minutes.
Drain and mash with potato masher. Slowly add the half and half, butter and seasonings while whipping with a hand mixer set on the lowest speed. Adjust seasoning.
