Sweet Potato Casserole with Praline Topping
Potatoes:
3 large sweet potatoes
1 teaspoon flour
2 teaspoon vanilla
2 eggs
1 stick butter
1 cup sugar
1/2 teaspoon salt
Topping:
1 cup pecans, chopped
1/2 cup butter, room temperature
1/2 cup flour
1 cup brown sugar
1/2 teaspoon cinnamon
Peel sweet potatoes, cut into cubes and boil until tender. Mash potatoes with butter, sugar and salt. Combine eggs, vanilla and flour in a small bowl. Add to potato mixture and mix well. Pour into 9 x 12 greased baking pan.
Combine topping ingredients and sprinkle over potatoes. bake at 350 degrees for 30-35 minutes.
Serves 6 to 8
