Sweet Potato Pie
1 unbaked pie shell
2 large sweet potatoes
1/4 cup butter, room temperature
1/2 cup brown sugar
1/2 cup sugar
2 medium eggs
1/3 cup heavy cream
1 tsp vanilla
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 teaspoon ground nutmeg
1/2 tsp salt
Place oven rack in the middle of the oven. Preheat the oven to 400 degrees F. Wash sweet potatoes and prick them several times with a fork. Place potatoes on a foil covered baking pan. bake for one hour. Remove from oven and cool slightly. Cut potatoes in half and scoop out the insides and place in a large bowl. Don’t use any of the stringy fiber from the ends of the potatoes. Discard the potato skins.
reduce oven temperature to 375 degrees F.
Using an electric mixer, beat the potatoes until smooth. With the mixer running on low, add butter. Then add both sugars. Add eggs, one at a time. Add heavy cream and vanilla. Add cinnamon, cloves, nutmeg, and salt.
Pour batter into pie shell. Bake for about 45 minutes. When the pie crust is golden brown, carefully cover the crust with an aluminum foil ring. Then continue to bake for about 15 additional minutes, or until a tester inserted into pie comes out clean. Cool at least one hour before cutting.
