Texas Style Chili
1 tablespoon canola oil
1 pound ground chuck
1 medium onion, chopped
2 jalapeno peppers, seeded and diced
2 garlic cloves, minced
1 tablespoon ground cumin
3 tablespoons chili powder*
2 teaspoons dried oregano
1/2 teaspoon cayenne pepper
6 ounces tomato paste
3 cups water
Heat oil in a large dutch oven or stock pot. Add onion to pot and sauté five minutes or until translucent. Add garlic and jalapeno and cook one more minute. Add ground meat and cook, stirring until browned. Add cumin, chili powder, oregano, cayenne pepper and tomato paste and stir to combine. Add water and bring to a boil. Cover, reduce heat, and simmer for 30 minutes.
Serve piping hot with shredded cheddar cheese and sour cream.
*preferably ancho chili powder
