Roasted Pork with Rosemary and Garlic


2 to 3 pound pork loin roast

1 tablespoon garlic, minced

2 tablespoons fresh rosemary, minced

1 tablespoon sugar

1 teaspoon olive oil

1 teaspoon salt

1/4 teaspoon coarse ground black pepper


Preheat oven to 450.


Line a 13x9 inch baking pan with foil.


Rub pork loin with olive oil Combine garlic, rosemary, sugar, salt and pepper. Rub seasoning onto all sides of the pork loin. Place pork in the prepared pan. Cook for 15 minutes.


Turn oven temperature down to 325. Cook until internal temperature reaches 155 degrees (one to one-and-a-half hours).


Remove pork from baking pan and let rest, covered with foil, for 10 minutes before slicing.

 

Serves 4 to 6
