Storing Leftover Produce


When a recipe calls for 1/2 onion or 1 rib of celery (this is often the case when you are cooking for one, two or for a small family), don’t fret about waste. Keep a supply of small (pint-sized) freezer bags on hand.

 

If a recipe calls for 2 stalks of celery, for instance, resist the urge to put the leftover celery back into the vegetable crisper. Take a moment to chop it up and put it in a freezer bag for the freezer. The next time you need chopped celery, you’ll have it. Oh, and don’t forget to label the bag with a marker or labeling machine. Use the same technique with onions, bell pepper, and green onions.
